Starting herbs in water?

We got some organic herbs that were given to us. (They are organic, but still do come from a store) We decided to start them in some cleat jars,
filled with water and just sticking them in the window.
The Terragon (after some nursing) took off. but the Thyme (which we
got about a week later) hasn't quite rooted yet, but some of them have
grown. Is it okay to leave them, or should we plant them in a pot?

I had never heard of starting herbs in water before.  Everyhthing that I have read has them starting in soil pots with enough sunlight and water to get them started.
